The kids won't enjoy Biltmore Estate.
There is good canoeing on the French Broad River. Checkout the Asheville Outdoor Center. they rent canoes and kayaks and do shuttles, and you will float right by the Biltmore estate.
We live right close the Parkway. The section from Asheville to Boone is the absolute best, but to drive much farther can get old real quick
