For us the way we reinforced the bunks was to double the number of screws in the ledger and using 5/8 plywood to replace the 1/2 OSB from the factory.
As far as the AC is concerned I'd wait to do anything, a 15k AC in a single room trailer of that size is probably fine, we had a similar sized unit and camped at temps up to 115 without issue.
Btw the bathroom wouldn't work, besides the need for a vent for moisture control the vaulted ceiling would keep the unit from sitting properly.
