For sure, the AC is not as necessary in the BC mountains as many places. We've done without for years. Only used it rarely prior or wished we had it a few times. Although I believe if I was spending big bucks for a brand new high end TC, I'd get AC. Like other "options", oven, microwave, etc, it's handy whether its your personal preference or not and think resale.
Don't worry about leaks if that's part of the consideration, IMO.
On the truck, I'd bring the camper home on stock suspension, get it loaded, set up, etc and then decide what upgrades to the suspension may be necessary.
Also, lower stable loads are the easiest upgrade to "mock up" quickly and for free to see if that's what works for you.
My guess, based on having some 4th Gen Ram 3500 srws in the past and also big TCs (not in combination though) is you'll want a sway bar and some minor load carrying mod, whether it's stable loads or something else.
