So, in my search for the TT that the wife and I want, I've been diligently trying to calculate GVWR, GAWR, Traier capacity etc.. etc...I've read quite a bit, and I thought I would be okay with my tow ...

You have done the figuring correctly and have reached the correct conclusion......you need more truck for the trailer you are looking at.
Kudos to you for doing the weighing/figuring prior to trailer purchase.
Most folks buy trailer,,,never weigh and convince themselves all is OK.
That ends up either towing with white knuckles/sweaty palms and attitude OR parking trailer and not going camping cause of bad towing experiences.
ALL vehicles can tow............issue is staying within towing capabilities
Real world actual payload gets eaten up quickly
