With that payload you may have the Ram Laramie Crew Cab 4x4 diesel I am looking at. If that is so, then I think you have more payload than 2100 lbs.
The placard states that the payload is calculated with five passengers. If each of them is 150 lbs. (which is what I think is the standard) then the simplest thing is to add 750 lbs to the payload for a total of 2850 lbs with no passengers.
Then start subtracting you, your wife, and the dog to get payload left; I will let you do that, no way am I going to guess the weight of a woman :).
I made that mistake. I know that the entire weight of what I want to put on the truck is about 1900 Lbs. That included me and my wife, tongue weight and stuff. I added three passengers to the truck payload and then subtracted 1900 lbs. That double counted the two of us.
It was only reading this thread that I realized my mistake. So I went from about 600 lbs left to about 950 lbs. That makes me more comfortable with a 2500.
