The truck weighs 7200 lbs with me in it and a full tank of gas. What would you register it for?

Your state may be different.
The state expects you to register your vehicle based on the GVWR. Since yours is 10,0000 that is more then 8,000 so you should register at the next available of 12,000. In Illinois some towns will ticket you a dollar a pound for incorrect plates. Most cases are heavy commercial trucks but some towns have gone after pick up trucks for the revenue.
