Like everything else, there are pros and cons to both and no right answer. As others have mentioned it mostly comes down to what you need and how you use your truck. I've had both and am currently in a roll up cover. I like the simplicity and ability to get it mostly out of the way (rolled up against the back of the cab) in about 15 seconds. The bed stays about 95% dry so I keep most things in covered bins - which also helps for emptying the bed in a couple minutes.
All that being said, I don't regularly carry anything of much value in my bed and the cover isn't worth that much. Realistically, if someone slashed/ruined the cover and took everything I'd be out less than a grand (the aggravation and running around the replace everything would be far worse). Also, I live in a pretty nice area and don't part too often in sketchy places.
The biggest problem I had with canopies was visibility and I have to think that has been mostly solved with backup cameras and sensors. While driving I suppose there's a bit of an advantage to the cover but really with my CC my blindspot is right next to me as opposed to anything a canopy obscures. And really I don't have a blindspot but even after driving trucks with great mirrors for years can't get use to going based just off the mirrors.
Anyway, OP, I think it's largely a personal choice that comes down to how you intend to use the truck and what you carry. BTW... beautiful truck (and I'm a Ram guy :))
