The cost to design and custom fit out will far outweigh any savings from "simplifying"
Custom it usually in the big high end part of the market...but they come with big price tags. Very few people want to dump 6 figures into a 20ft trailer.
I would say your best bet would be to find a good quality enclosed cargo trailer and a good craftsman who can fit it out...but that comes with it's own set of complications.
