Very cool! Love the frame. Lippert should take note on how to build a well-designed frame, lol... What an opportunity to incorporate all sorts of great features that aren't available out there. Excellent idea on the 2 large windows. Would love to see it in person when done.
What are you doing for insulation? I would think for that unit, spray foam would be a good choice. Can never have too much insulation in an RV and it would solve the issue of moisture getting into the structure and causing problems.
Are you going to use CGs where there are FHU sites or be doing some dry camping? If only camping at CGs with power, I would not install a furnace and instead use recessed electric heaters in strategic locations (ceiling, walls or in cabinets). I did that to our current TT - info. here. That would save space that a furnace would require and give more freedom on interior layout/design.
