Bought plastic (melmac?) from WalMart at the end of summer, when they put all their picnic stuff on sale. I use paper or the plastic depending on the meal and what is planned for the day. I have an assortment of stainless from several TT's and MH's that I or my parents have had. When I go full time, I plan to go with Corelle and a matching set of stainless.
Corelle, Melmac and paper. We have never gone for just a weekend so I do a lot more cooking than some others who can get along with paper. The Melmac comes from garage sales
odd and end corelle from garage sales, old mismatched silverware from past set or garage sales. also do the chinet or Dixie paper plates for salad, sandwiches, etc. keep plastic silverware for traveling with paper so there are no dirty dishes waiting to be done when we arrive.
I also have some of the Nordic ware mw plates too. have to make sure everything is microwaveable for DH to use and not melt.
Long ago we got a set of enameled ware and have used it every since. Nothing feels like camping like steaming hot chili served on a tin plate around a campfire on a cold night. Honey got some plastic stuff and it just doesn't feel right.
We purchased some commercial restaurant (decor) type dinner plates and cups and saucers, obtainable at a restaurant supply. Extremely durable. We use them only for nice dinners. Else paper plates and cups.
