Just how far into the boonies do you camp? :)
Even the smallest gas station I've passed in Canada, Alaska and remote Utah either did propane exchange or refill. Your fridge will stay cold a long time if you keep the door closed.
My worry is running out of lp for the furnace and hot water heater, which I use while winter camping. I carry a "spare" 20lb tank in the truck that mostly runs my Weber grill.
