Most manufacturers will build the interior to meet your needs. The dealers tend to order fully loaded units because that is what the majority of their customers want. If you go to a long standing RV dealer, especially a mom and pop shop you should be able to order what you need.
There are companies that make cabinets which have a lot of what you want to go into vans or cargo trailers.
Another option is to look for a good used 50' or 60's trailer which won't have all the bells and whistles. You can find some in near showroom condition on craigslist, facebook marketplace or RV trader.
