Because the 3.5L Ecoboost makes more horsepower and torque than the 5.0L between 1,700 and 5,000 rpm especially between 2,000 to 3,000 rpm where it makes up to 75 hp and 150 lb-ft more. This low end power makes for more usable power in more gears and speeds. Similar to why a turbo diesel is a better tow engine than an N/A gas engine.
The 5.0L starts making more horsepower around 5,500 rpm which is good for the drag strip, but not for towing.
