They probably don't do it because of the cost associated with re-engineering a whole new motor/supporting systems and completely re-tooling the factories. It is much easier and more cost effect to re-scale and take away cylinders for various displacement sizes of a certain block configuration versus having two block configurations.
Although BMW and Mercedes already make an inline 6 turbocharged direct injected engines in many of their vehicles. Mercedes just recently went back to inline engines while BMW has been making inline 6's for decades. The X5 SUV with an turbocharged inline 6 3.0L is rated to tow over 6k. These are closed deck engines and would probably run into cooling issues if put in a truck meant to tow 10k.
