I am ordering a new truck( F250) with camper pkg for an Artic Fox 811. (Will be loaded very close to factory limit or slightly over) I did a limited search but could not find much discussion on tire...

20s will have less side wall flex than 18s of the same tire diameter, but you should check to see if they have the this option you want with the same load rating. Since you are ordering, you might as well buy the higher rated nominally more expensive truck with higher rating. If the 250 is at its limit the 350 will likely be under.
There are lots of people here who try to make their 250 a 350. Its much easier to buy it as 350.
