I had kinda thought it was going to be like the up/down paddle shifting in a car where you just keep tapping up or down to move through the available gears.
On our Yukon, switching to M shows you the gear you were in (which I do sometimes if I’m curious), then I can + or - anywhere from 1st to 6th.
Whatever number is displayed is actually a maximum gear so if I pick 4, it will shift through 1-2-3-4 from a dead start. I read that recent HD models will actually start in 2nd if it’s in 2. Generally I use M to hold back on steep downhills, even when not towing anything. I also use it to hold a lower gear for needed acceleration onto a busy road though T/H mode does that nicely as well. In normal mode, the thing grabs 2nd far too soon and bogs terribly after pulling out into traffic from a stop sign.
