Somewhere between the "I've done it and it's just fine(s)," and the "I would never ever tow XXX with YYY," resides the truth.
The truth of the matter is the tow rating you got out of the manual is the MAXIMUM value under IDEAL conditions. Nobody's is ever maximum or ideal.
It's a good idea to get the REAL weight of your truck to see where you stand with regards to the ratings. Almost 100% of the time, you are heavier than you think you are, and have less available capacity than you think you do.
You can also ignore the ratings, hitch up, and go. Some people do that and are perfectly happy with the result.
