We went from Albuquerque to North Carolina (Charlotte area) last fall and took 3 days. I drive 60 on the highways. I do tend to drive fairly late so 4 to 5 days is more likely in your case. We did not stop for any tourist stuff but spent a full day crossing Arkansas on I-40 due to construction. I will never go that way again. Came the southern route thru Georgia, Louisiana and Texas on the way back to avoid Arkansas. Still 3 days. You are going a full days travel past Charlotte if you go that way.
