I can tell you that hanging the sheet rock on the ceiling with just the wife helping was not fun!
Ours is 16' ceiling, 14' roll up door. It's nice now having to worry about a future truck or camper sitting taller than our current one. Plus I can work on top of the camper roof while it's indoors. It is also 16' because part of it has a 2nd floor loft.
I drywalled the walls with help from my brothers but I paid someone else to do the ceiling. Heights are not my thing. I used their roll-around scaffolding to install the outlet covers for the lights and that was enough for me. Mine has a couple of 4000W electric wall heaters that keep it around 50 when set on minimum. The walls are 2x6 and fully insulated so it only take 10-15 mins to be warm enough to work in a t-shirt.
If you do add floor heat for lower heating cost, you can always add a couple of electrics ones when you need to raise the temp quickly.
