The tires are the prescribed tires, properly inflated, and brand new that morning.
That's good. Note that "properly inflated" for an empty truck is NOT properly inflated for a fully loaded one.

The trailer was empty, except for the furnishings and water.
Which is where I think you are in trouble. You will never drag it anywhere else completely empty. You are going to put clothing, food, camping gear, water, etc. in it, and it will weigh probably 1,000 lbs over limit on you. {EDIT: I misread your sticker saying 6,000, rather than the 6,600 lbs you quoted. So maybe you'll only be 400 or 500 lbs over weight. Maybe not much, but you are still pretty close to the limit here.}

The extreme sway event was caused by us being undercut in traffic.
Hmmm, yeah, that caused it, but the fact that it happened at all is not a good sign. If it only happened once, you may be only 5 psi under inflated, and that's a cheap fix. But if you drag it anywhere else without fixing the issue, next time you might land in the ditch, and we certainly don't want that to happen.

Acceleration and going up hills is a struggle, even with the tow package engaged.
Yeah, that's what happens when you get close to the ragged edge on trailer weight.
