I really did trust the dealer too much, in more ways than one. But, that's on me, and I don't usually do things that way. Normally, I'm on forums at the very beginning of any big decision and working to avoid these sort of situations. Again, on me. We got caught up in the excitement and while we thought that we were asking the right questions, we really didn't, and we didn't do our own due diligence before signing anything.
The dealer offered an option of trading it in for something smaller. I'm going to look into that. Go for a Schwinn with a banana seat rather than a Harley until we learn the ropes and how to do this correctly.

Sounds like a plan. If the dealer is interested in a long-term customer, he'll make it right for you. Not many are, but it is something that can happen.
If you don't make the trade here's one more "vote" for addressing the sway by increasing tongue weight. A low tongue weight is the number one cause of sway. Here's the thing - if your water tank was full and it is behind the axle, you were putting HUNDREDS of pounds on that side of the teeter-totter. That reduces the tongue weight significantly. This is magnified by the fact that the rest of the trailer was empty, by your account. Normally gear up front would counteract that excess water weight. Empty your water tank, put some gear up front, and give it another try.
That won't affect how hard the Tahoe was working to pull the trailer, however.
