Ford 7.3 power stroke f250 any good?

I have a '00 f250 with the ZF6 manual transmission, AFE stage 3 intake, hypertech tune( I'm Getting rid of it) and did a muffler delete with factory sized exhaust piping, EGT and boost gauges and other than that the truck is stock and has 160k miles. I tow a 2015 grand design 328m with it and it tows fine.... First and last big trip I did was from Visalia, ca to Las Vegas and made it on one tank of gas and was still able to drive around for a couple days. I got right at 10.5-11mpg. EGTs never went above 1200 degrees. I was not the fastest accelerating and started slowing down early. Only issue ice had with the truck is when the CPS went out on me. $15 and 20 minutes later I was back up and running... Truck has been very reliable and would not get rid of it mainly because it does not have a catalytic converter and no DEF. I got the truck for a great price of $0. I was given the truck by my then step dad realized he could no longer drive it due to his health issues...

I saw a mpg increase and EGT decrease when I removed the muffler it wasn't much but still noticeable on long trips
