This is correct for the F150 but it does include all Factory options. Curb is wet weight as it leaves the factory (actually I understand that only the weight of 26gal of gas is counted no matter if your tank is larger).
There is a wide range of F150 payloads (GVWR minus curb weight) depending upon Factory options, cab styles, wheelbase and so on. I've heard of payloads that range from as low as 1200# for a fully optioned 4x4 SuperCrew Platinum to over 3000# with a 4x2 Reg Cab XL with the Heavy Duty Payload option. Ultimately, it is the yellow sticker on the door jamb that tells the tale.
My F150 Ecoboost FX2 (4x2 Super Cab, not Crew) has 2050# payload and handles an 8000# trailer with ease, leaving about 1000# for people, Leer cap, kayaks and other stuff.
