I have that trailer! Outback 25RSS with the side slide out, front bunks. It's a 2007. As I recall, Coleman made one at one time, don't know if they still do. Mostly see other Outbacks when we're travelling.
As far as bunks in the rear, there are quite a few manufacturers who offer bunks either in the very back, similar to the Outback (across the back), or on one of the 2 rear corners, with the bathroom next to the bunks. I looked at several StarCraft models about a week ago when I was in a local RV dealer getting parts, and they've got some really nice floor plans.
