A 2500 suburban would pull a boat of substantial size. Modifying a suburban with air conditioning, sleeping quarters, and a bathroom, although it could be done, that's a LOT of modification.
How about considering the suburban 2500 and the boat. Get a boat big enough it has it's own kitchen area, bathroom, and sleeping quarters below deck. Then you could use the boat as a boat, or a camper! You'd have the best of everything there. I'm just tossing an idea out there for you, something you might not have considered.
But, for your price range, a CLASS-C sounds more logical.
