Generator
I am looking to put a generator on a folding cargo rack on the hitch of the TT when I get it, I want to also be able to run it while it's back there (good idea or bad) because I plan on building a cag...

Mounting a genset is possible. However its not as simple as just sticking it back there. I had a rear platform custom made and welded to the rear of my TT. The bumper was also replaced with a steel 4x4 tube that made the bumper a structural component vs. a flimsy stink slinky holder.
Another consideration is that I had a full frame 11K GVW TT with a 4K CCC. The trailer frame was an old school 10" I beam. There was nothing light or reduced about the 36'trailer.
The rear platform with 4300is Subaru genset. Weighed almost 400# and definitely impacted the towing performance.
I have a Sherline scale and had to initially reload and re balance my cargo to ensure proper TW. I also towed with a Hensley Arrow and had an Arvika 4-bike rack on the tongue. The bikes and Hensley all played a part in counter balancing the genset on the rear.
In the end it was an awesome set up. The genset was secure in the box. I could run the genset in the box 24/7.
I towed the trailer with a PSD Excursion. The rear platform was one of the few options I had to haul the genset.
Between the platform and the box I had substantial amount of $$$ invested
A large genset can be hauled on the rear, providing your frame is stout enough, your rig has ample CCC,your TW can be maintained at the correct ratio. Beware all trailers will not meet this criteria.
There are plenty of horror stories nevertheless it can be done successfully if you are willing to make the investment.
