The fifth wheel was more for rv/mobile home parks when we were full-timing where the trailer is better suited boon docking.
We stayed with a TT for similar reasons. We bought a used 3/4 ton diesel truck, so when we bought a bigger RV, we could have gone either TT or fifth wheel. But we store the RV at a storage lot near our fav camping areas during the summer camping season, so we take food, clothes, etc from home, then pick up the TT and go to the campground, then put it in the storage lot after. Like you, we needed the full bed of the truck for storage, so went with a TT. I also need the bed of the truck when at home, so wasn't willing to have a fifth wheel hitch in the way.
I put a back up camera on the truck, so that made hooking up the TT pretty quick and easy.
