The reason I think this is because my old 1997 F150 had a "tow capacity" of #7700... But, the trucks GVWR was only #6250..

According to page 457 of the online
2007 Silverado 1500 Owners Manual, the 5.3L 4x4 Crew cab Short bed 3.73 has a "Maximum Trailer Weight" of 7500# and CGWR of 13,000#.
Looks to me as though the "Towing capacity" (a.k.a. max trailer weight) of 7500# cited by the OP is the correct value.
