Only you can decide what's right, but I agree that taking down the table to make breakfast every day is a PITA. Bunks for the kids are definitely nice, as is some sort of closet for their clothes. Since you have been tent campers and plan to spend most of your time outside, I wouldn't worry about having a lot of interior floorspace, especially since you like the idea of a shorter unit that is easier to find space for.
