If it were me, bunk house with larger shower and a good, usable cooktop.
We had a small cute TT and it got real small real fast during adverse weather and was not as functional.
The bunks can serve as additional storage when the kids are not going with you.
A shower too small and a poorly located toilet gets annoying.
All of this is just my experience, only you know what works best for you and yours.
