Maxxis tires are about the best choice as ST tires go. Jumping up to a E load rated tire is fine but may not be necessary unless your rig is heavier than stated GVWR. We were able to get 3 years out of our stock China bombs and replaced all four with Maxxis ST tires for peace of mind. They have been performing well over the last 3 years and I expect a couple of more years of service out of them.
I will be replacing my 7 year old Maxxis D ranges for E ranges this weekend. I got great service from the Maxxis tires. By going to the E tires (assuming 225/75R15E) and a rim rated at 75 psi the OP will be able to get a load rating of 2720 per tire (Maxxis inflation chart), any reserve capacity gained is good. BTW, after 7 years of use I damaged one of my Maxxis tires on the last trip I believe when I hit a rough rail crossing at 60 mph. The tire did not blow out but was losing pressure when I got to the CG and I was forced to change it. I just couldn't be certain if the damage was strictly from the impact or if age played a role so I am changing them out.
