Height has been my issue so I cant imagine running around in a unimog.
Chainsaw would be a must for sure.
I carry a Stihl MS361, 3' limb clippers, a bowsaw, and an EstWing long handled hatchet (plus mixed gas, bar oil etc.) One storage box is entirely commited to this gear. I have never had to use the Stihl except for firewood, but I can sure as heell get back out even if a large tree goes down. I have several times had my wife ride on the roof, and clip or lift branches out of the way on backwoods USFS roads or getting into a campsite; she speaks into the mic of the camera to tell me to "stop" "wait" etc. I usually listen ;) Remarkably, being so short (length) I have often been able to weave my way from side to side to avoid limbs without having to do any surgery. I've driven down a USFS road on a busy weekend seeing the litter from other campers' roofs including fridge vents and vent covers while I weave my way along without danmaging anything (they were from some long 5'ers that I met later....they simply couldn't weave at all because of their length.) But I do come prepared.
I would think most height issues in a Unimog, can be solved by simply pushing right into whatever is in the way...at least the ones that have some rub bars external to the body. For us height hasn't been too much of an issue and we camp......we camp a lot, and mostly off in the Sticks.
