I'm thinking of pouring a concrete slab for the wheels on each side of my TT and a smaller one for the tongue. Anyone have any thoughts about this?

I'd look to see what the cost difference would be to fill in the middle also. Grass won't grow in the shade, and it will just be dirt/mud under the camper.
Also with just the strips, it may be tough to keep it lined up, and not get the tires off into the mud.
