We are in the process of doing the same thing in our new TT. Last we heard the dealer was playing phone tag with Skyline, trying to get the door and hardware for us. We have already pulled the microwave (before we even used it) but plan to hang on to it just in case we ever decide to sell the camper. Ours did not have quite as many wires as yours but we did have to add a plywood floor in the cabinet since the existing one did not cover the entire floor and was just free floating. Once we get the door on it, the wires won't bother me at all.
I was impressed with Jayco. They were able to produce all the part numbers that we needed in less than 24 hours. It took another 4 weeks for the cabinet door to be built and everything shipped. It was pretty much a hassle free process and the cost was well worth it. Having to source all the specialty screws was a pain, but I managed to get pretty much what I needed at Home Depot. I traded out some interior screws so the exposed screws would match the other hardware.
