I want to commend you for being an informed buyer. I leave my trailer loaded and only add fresh food and water before I head out. It might get old loading and unloading the trailer each time. Pulling the trailer, some people are content loaded to the max with sluggish performance, others don't want to be slowed down by hills. Only you know witch category you fall into. When I bought my first TT 20 years ago I took way to much stuff. When I got back I unloaded everything I did not use, this made a better towing experience. The closer you are to the max load the rougher the ride and performance becomes sluggish. I hope you find what works best for you.
