Our TT is not a hybrid, but... it has the "mid" size camper refrig with the inside freezer compartment. Works great. On rare occasions we will use a cooler if we have a lot of food that needs to be kept cool - we plan on eating the cooler food the first day. But it has never been any kind of problem. And that little interior freezer compartment surprised me -- it can freeze ice pops!
Friend of ours have a 19ft Jayco TT with the refrig and separate freezer, it is really nice. I am a bit jealous of that! Also, their 19ft TT can sleep 6 with the dinette lowered - possibly 7 if two people want to share the pull out couch.
Anyways, you may find a mid size refrig to be just fine, I wouldn't let that be a deal breaker on a camper you like.
As to room in the camper, besides sleeping we are only in the camper if it is raining... and even then, I'm usually out under the awning. I do think you should get the biggest awning you can. Our TT has a U-shaped dinette (that drops down to a huge, almost queen size, bed) that is great for playing games on during rainy days.
Bathroom - make sure you can sit comfortably on the toilet, nothing blocking your legs / feet. I say this because our bath has the sink pipes boxed in (it kinda looks like a baseboard heater) running along the wall on the floor opposite the toilet... when we bought the trailer, it seemed to be no problem with my feet hitting that, but shortly I regretted that setup.
