11500 is the max weight that can be safely loaded on the truck. This is weight of vehicle and payload. That same sticker should tell you exactly what your payload is minus vehicle weight. you are confusing gross vehicle weight rating (truck only) with combined gross vehicle weight rating (truck and trailer).

GVWR is NOT the tow rating. The tow rating is found in the manual. It is listed nowhere on the actual truck.

That 'hitch weight' is DRY weight based on the DRY weight of trailer

12,295# Dry weight....2060# dry hitch weight======roughly 17% pin ratio
14,060# GVWR with a 17% pin ratio (which is LOW) is 2390#
More then likely you will end up when trailer is 'camp ready' with a WET pin weight closer to 2800#

My 5vr weighs 13,873# (Scaled weight) with a wet pin of 3090# (roughly 22% pin ratio)

Your truck probably weighs 7500-8000 lbs. That leaves you with 3500-4000 lbs of cargo capacity which includes fuel, passengers, hitch weight and any other items you put in the truck.
The truck is rated to tow 15,200 lbs so if you don’t exceed you trailer gross weight you will be almost 1200 lbs under max tow rating.
With the trailer hooked up the max your entire rig can weigh is 23,000 lbs.
Based on your numbers you’re OK in all areas.
However, manf published weights may not be as accurate as they claim.
Load everything as you plan to use it and weigh it to be sure.
