It does feel a little rung out with 7000lbs behind it but a 250 might be different. I can find the odd 250 with the 6.2 but the bodies are usually in terrible shape. I'll check out a 250 5.4L. I had a 2010 F-250 with the 5.4 (it was only 8 months old when I got it - had been a rental). It was a very nice truck - but the 26 gallon tank caused lots of stops. And wasn't much fun climbing in the mountains.

I would like a 3/4 ton for the stability. Pulling a 29ft TT with a 30 mph crosswind in a half ton takes about 2 years off my life everything I do it!
I have the same (GMC instead of Chevy, see sig), and it is very stable - and can accelerate up the mountains if needed. Your two kids might want to bring friends sometime.
