I towed a similar load for 11 years with my '04 chevy 2500HD crew cab with 6.0L engine. I didn't win any races but it was rock solid reliable and the 3/4 ton chassis handled the trailer with ease. The last few years we've been towing through eastern Tennessee and the continuous 4,000RPM up hills finally got to me last year. That's one reason why there's a RAM diesel in my drive now. The other reason was the truck was 2X4 and I got tired of getting stuck and I wanted a 4X4.
But, I don't want to take anything away from the Chevy. It was a reliable tow vehicle and handled 7,000 lbs very well.
Unless you're going to spend a bunch of time towing in the northern Rockies a V8 gasser crew cab will do very well for your needs.
