Your specs are not all that different from ours. We traded 'up' for a 3500 diesel SRW, and I do mean 'up' from the 2500 gasser that we had in the past. The difference when pulling on grades and at altitude is night and day. If you can find a used one, great. Let someone else take the initial depreciation. Of course, the problem is in finding a used 3500/350 diesel. Not as many out there. We've found an 8 ft. bed to be an advantage for ride, but a 6.5 ft. bed will do you fine.
As for hitches, I'm a fan of PullRite which you can get in a 'super-slide' model if you get a short bed truck. There are lots of good hitches out there including Reese and others. But I would definitely go with one that has locking jaws over a slider bar. With jaws, you have a lot firmer hold on the king pin with a lot less chucking.
