I would never put a trailer in service till after servicing the hubs. I do all my own work, it's the only way that the job will be done right. You can watch YouTube videos to learn how, but some of those folks are slobs.

I also do most of my own work, and I dont trust someone else to do the, either. It's a very simple job, and they don't put the most qualified mechanic on them.
To the op, you can also buy a bearing packer for about $25 which helps keep the job not quite so messy.
As for the tires, you're probably going to have to get them mounted by a shop.
