The OP stated that some of the under floor space was ducted for heating. Wouldn't that eliminate humidity as a problem?
FWIW, I removed the floor in my old Starcraft after 42 years to add additional insulation. The under belly is sealed with a continuous sheet of aluminum. There was no sign of rot or condensation damage whatsoever.
I'd suggest to cut foam board to friction fit those spaces around pipes and tanks. LarryJM did a great job on his trailer, the pictures in his album say it all.
