I know I'm going to get it for this one, but as someone who's been stuck behind a "speed limit" driver who's being "safe", I feel I have to point out what's obvious. If you are truly not in a hurry, also try pulling over from time to time to let others pass safely.
Using my journey this past weekend as an example, I would like to say that no matter what the speed limit was, I had cars coming up behind me and preparing to pass. That process took place for quite a few hours.
On the mountain curvy roads, the highway design provided turnouts for us slower vehicles to use. But on the roads that are not so curvy, or mountainous, the straight a ways provide numerous sections to safely pass - understanding that the road is not full of vehicles. At no time did I feel "responsible" for slowing down the people wanting to go faster. In CA, My legal limit is lower than sport cars.
