What I did was camp in my driveway every Friday night (including cooking) with my kids for a couple of months before we had the time to take it out. Gave me time to figure out what I needed, and how to work all the systems. When we took it out for a shakedown run (raining all weekend) there were no issues, except for small forgotten items (mustard, spatula, oven mitts), and we built our own checklist from our notes.
The very next trip was cross-country and back, which was without any issues, but I was still learning the whole way, and picked up some items along the way as well.
I was getting tired of bringing things from the house (cooking implements, broom, etc), and started slowly purchasing things that we only leave in the trailer. They still are on the checklist, but it makes for less trips from the house. I seem to be purchasing things after each trip to make the next one easier.
