Everytime I tear something down like that I usually go over-board a bit rewiring different cable things to support my other whems like ham radio, emergency power panels and receptacles, RG and Audio/Video cables, Outside Ham radio antennas mounts, etc... I end with multiple power distribution centers and high current DC blocks etc...
Once you get the metal sides off it all down hill after that haha...
I love to tear into these kinds of projects but usually I don't have the place available to work on it...
You also end up owning Lowes and local hardware store. At least the nuts and bolts section...
I'm one for installing flexible PVC conduit everywhere I think I might want to pull future cables...

I would also look at some of the features the Australia trailers have on them. Those guys downunder really come up with great camping off the power grid trailers.
The downside is you will most definitely end up with a better than Lance 9000 but it will only be worth what the sales book says haha... I'd run it until the floor falls thru....
