Hot temperatures will most certainly cause a pressure buildup, hence the existence of thermal relief valves. The buildup is probably not enough to cause damage to the lines. If you're concerned, just leave a hot and a cold faucet cracked open.
The PRV on water heaters are set to open at 150 psi (210*F)
Hot summer temps in excess of 110*F would NOT create an increase in the plumbing system inside an unused RV. There just isn't enough thermo transfer from outside air temps.
OP didn't relieve system pressure after disconnecting water hose.
When he opened the bathroom faucet it spurted.
Doubt it caused any leak(s) otherwise the system wouldn't have had any pressure.
