Also, if you have not made the backs yet for the seats, I would suggest making sure to have some sort of a slight angle in them, as straight backs are not usually comfortable. When we cut down the single pole for the table, we had quite the time getting the cut end to fit into one of the "holders" that we bought. I had to cut 4 lines into the end and squeeze the pieces together so that they were angled enough to fit. I hope what I am describing makes sense.
One more thing. Make sure the table is securely mounted. We might have gone overboard, but now we find ourselves using the table to help get down from the bed area by placing one hand on the top of the table, so it takes a lot of force. Nice having it secure so that we can use it that way.

Yes I am going to hinge the tops of the seats for storage. Those poles you can get in different heights. The wife is going to cut the factory cushions down to fit like most dinettes are. The fridge is located differently from yours so we won't need to lean on it other than eating. I would like a piece of aluminum diamond plate for the floor between the seats to mount the table mount and for wear.
