I'm just curious how often you check your fluids on long hauls - particularly oil. On my upcoming trip I will be going as much as 600 miles in a day, and I'm not thrilled with the idea running that ...

Really depends on your engine.
With the 8.1, I'd check at least every 3rd fuel stop. I know my 8.1 Burb used around a quart of oil every few thousand miles. Enough so that I always had a quart with me (and it didn't leak a drop).
Some 8.1's are known to use oil.
