The biggest thing that I like about fifth wheel is how it tows. I almost don't know it is behind me vs the wag that you get with a travel trailer. I think there are better hitches now to reduce wag.
I have never had a "wag" issue with any of my bumper pull trailers and I have never used WD or anti sway devices.. Have even had to make emergency maneuvers at high way speed to avoid deer running in front of me at night and not even one hint of movement of the trailer wanting to snap out of line.
Wag comes from insufficient tongue weight and or insufficient tow vehicle. I have neither as my tongue weight is 15%-16% and use a 3/4 ton truck to tow 18ft, 20ft and 26ft trailers.
Back to the rest of your question, most TTs most likely will feel smaller to you from being used to a 5th and not many have large "open floor plans". Your 5th floor sits above the wheels, give you a lot of open floor space to work with.
Many bumper pulls will have a lower floor height which goes in between the wheels which often means some loss of usable floor space since cabinets or couches are often used to cover the wheel wells.
As far as windows goes, the trend the last 10 yrs or so is to reduce the size and quantity of windows..
Depending on the layout, you might be able to find a rear living room with a large rear glass window which might be helpful for you..
