looking for week long trip destination advice.

What park would you go camping at mid July for about a week? Would prefer to have mountain biking at park or close and water. More activities the better. Don't want to travel more than about 200 miles...

Lake Quachita area in AR?? There are several SPs and, I believe, some COE. They fill up pretty quickly, so you'll need to get on it. It's not far from Hot Springs, so a day trip might be something you'd like. Wooded, so some shade to be had, all sorts of water activities. A few degrees cooler than DFW.
